The olive oil is produced from only estate fruit grown in the Santa Cruz Mountains. The olives are stone-pressed using no chemicals or heat to assist in the extraction process. The oil is left to settle in the cold cellar before it is racked. The final product is non-filtered. The olive oil maintains a wonderful fresh fruit quality with the perfect balance of spicy pungency and a delicate green bitterness. The oil has been tasted blind by a panel to verify that there are positive taste elements and no taste defects. The oil is certified Extra Virgin grade by the California Olive Oil Council and retains the wonderful soft green hue characteristic of the finest Tuscan Extra Virgin olive oils.
